From Scratch Peanut Butter Cookies

Hey everyone! 

I haven't had a ton of time for baking lately until today. I have loved coming up with food that I can make out of things I already have in my pantry! One less trip to the grocery the better! So what better dessert to make for an evening full of crafting, wine, and Netflix with my sister than homemade peanut butter cookies?

Ingredients

1 cup sugar, plus additional to roll cookies in 
1 stick of butter
1 1/2 cups flour
1 egg
1/2 teaspoon baking soda
1 cup smooth peanut butter
1 teaspoon vanilla (I'm going to be so sad when I run out of my D.R. vanilla, best ever)
1/2 teaspoon salt
 

Instructions

Set the oven to 375 degrees. Combine the sugar and room temperature butter in a large mixing bowl. Next add in the egg. Once that is mixed, combine with the peanut butter and vanilla, stirring until creamy. Finally add in the salt, baking soda and flour. Once well combined, roll into one inch balls and coat with sugar. Place onto greased cooking sheet and flatten with fork. I do a crisscross pattern just for fun. Cook for around 10 minutes until golden brown.

Enjoy! These are great as is or you can even add a Hershey Kiss or Reese's Cup Mini to the center! But always with a glass of milk! :D
